John is a research fellow at Brunel University London under the Department of Mechanical and Aerospace Engineering in the College of Engineering, Design and Physical Sciences. He is currently working on a project funded by the United Kingdom Research and Innovation partnering with a plant-based meat analogues processing company called THIS. The project aims at improving the nutritional profile of plant-based meat analogues using in vitro chemical techniques. Prior to this role, he was employed as a Lecturer at the University of Pretoria in Pretoria, South Africa, where he completed his Ph.D. Before pursuing his doctoral degree, he completed his M.Sc. at the University of Pretoria and an honours degree at Kyambogo University in Kampala, Uganda. John has a wealth of experience of over eight years both in the food industry, in research and in student-life programming accumulated through internships and employment.
The projects John has been involved in throughout his research journey are geared at the double burden of malnutrition and diet-related non-communicable diseases with techniques such as fermentation, extrusion cooking and the novel food-to-food fortification as pivotal areas of focus. He is passionate about teaching and answering food security questions and diet-related diseases using underutilized crops.
