Abimbola Uzomah is a Professor of Food Science and Technology with cognate experience spanning over 30 years. Her areas of discipline are Food Chemistry and Food Safety and Quality Control. She has authored/co-authored more than 60 publications which include journal articles, books, and book chapters. She has successfully supervised over 20 MSc, 15 Ph.D. candidates and over 100 undergraduate students, some of these are holding responsible positions in higher institutions, industries, and government agencies, within and outside Nigeria. She was an awardee of Oyo State Overseas Postgraduate Scholarship; an awardee and principal researcher, TETFUND National Research Fund (NRF 2020), for volarization of waste materials in the production of degradable plastics for food packaging; an awardee and principal researcher, TETFUND Institutional Based Research Fund (IBR 2020) on the Assessment of the Safety and Quality of Smoked Fish in Imo State of Nigeria; co-researcher on the Critical Factors for Combustion, Extraction and Purification of Biomass-Derived Alkali for Food Use (NRF 2021), co-researcher on the Control of Bacterial Diseases of Fish in Aquaculture Systems Using Indigenous Plant Materials (NRF 2022), co-researcher on the Production of Gamma-aminobutyric acid (GABA) fortified Rice (NRF 2022).
Recently concluded research studies are on the fermentation of blends of oil seeds for production of local condiments with enhanced production of monosodium glutamate (MSG) for food processing, and the production of carboxymethyl cellulose from different plant materials for use in the food industries. Current research is on the optimization of the processing and the fortification of cassava product (gari) with bioactive food components for better acceptability and enhanced nutritional quality.
Abimbola has had different administrative experiences, serving in various capacities within the University. She served a two-term tenure as Head of Department from 2002/2003 to 2005/2006 academic sessions. She is the Chairman for the curriculum drafting Committee of the Department of Food Science and Technology, Federal University of Technology, Owerri. She is currently serving as Chairman of the Committee for the development of the School of Engineering and Engineering Technology (SEET) Journal Publication, FUTO. The website of the Journal has just been launched (http://www.seetfutoetij.ng) and will soon be fully functional. She was a visiting scientist at Sheda Science Technology Complex Abuja (2007-2008), where she worked on degradable plastics amongst others.
Abimbola has a number of professional qualifications. She is a Food Safety Consultant and IRCA Registered as a Certified Food Safety Auditor for FSSC 22000. She is also a certified Auditor ISO 9001. She has received advanced training courses in ISO 17025. She was Consultant to the Federal Ministry of Health (FMoH) in the development of the National Food Safety Policy that produced the National Food Safety Act for Nigeria. She was Consultant to UNIDO as the Lead National Expert on Technical Regulations, for the National Quality Infrastructure Project for Nigeria, an EU/UNIDO/FGN Project, during which, she facilitated series of workshops/trainings for the relevant public and private sectors on international best practices for food safety and quality infrastructure for Nigeria. Abimbola is a licensed Public Analyst of Nigeria.
She is a Fellow of the Nigerian Institute of Food Science and Technology, a Fellow of the Institute of Public Analyst of Nigeria (IPAN), a member of the Society of Testing Laboratory Analysts of Nigeria, member of the Organization of Women in Science for the Developing World and a Premier member of the Institute of Food Technologist (IFT, USA). She is a member of IFT CODEX Committee on Contaminants in Food and attends the CODEX annual sessions in observer-capacity. She was a member of IFT Annual Meeting Scientific Program Advisory Panel (AMSPAP). She was Editor-in-Chief of Nigerian Food Journal and current Editor-In-Chief of IPAN Journal. She is a member NAFDAC Food Safety Advisory Committee, the Chair, Accreditation Advisory Committee of NiNAS, she was Mentor, Innovation Fellowship for Aspiring Inventors and Researchers (i-FAIR), an Israeli/Nigeria Government initiative. She was the first National Treasurer of the Organization of Women in Science for the Developing World and pioneer FUTO-Branch Coordinator of the organization.
